Taco food truck finds a niche

Rankin Crunchy & Confused Tacos is a food truck company that started in June of 2017. The owner, Roger Rankin, provided an inside scoop on how he began his business.

 “I wanted to do it for about 20 years, and finally was able to. I spent a few years putting together a business plan, and planning, seeing how much things were going to cost, what equipment was going to cost, how much potential profits would be. Putting everything together, putting everything that a bank would want to see, to make sure you have done your homework to see if they want to give you money."

“I ended up not having to go through the bank, a family friend was able to back me up financially. We are now business partners. So it worked out that way,” Rankin said.

After asking Rankin how business was going after providing service for more than a year, his response was, “With the weekly schedule a business is very good. I never would have thought that I would have been this busy.”

The weekly schedule for lunches are the following: 

  • Monday -  At the Florida Department of Highway Safety and Motor Vehicles located on Apalachee Parkway (11 a.m. – 2 p.m.)
  • Tuesday -  Not open
  • Wednesday -  At the Food Truck Court located on South Bronough Street (11 a.m. – 2 p.m.)
  • Thursday -  Tallahassee Orthopedic Clinic located on Capital Medical Boulevard (11 a.m. - 2 p.m.)
  • Friday - Department of Environmental Protection located on Commonwealth Boulevard (11 a.m. - 2 p.m.)
  • Saturday is at DEEP Brewing Company (2 - 9 p.m.)

The food truck also makes appearances at specific locations per request throughout the week, private lunches, weddings and different catering opportunities. 

Rankin said that he makes almost everything from scratch except for the tortillas. One specialty items that Rankin Crunchy & Confused Tacos provides besides tacos are the signature sauces. The taco sauces are homemade and prepped the night before service. Original recipes of his grandmother’s, Rankin has one sauce that is mild and another that is sweet with a spicy kick.

Customers of the food truck agree on the food quality and recommend others try out the food. “I happened to be driving on a back road one day, and noticed there was a food truck that served tacos. I stopped and tried it out, and those tacos were very good. The sauce that the owner said was homemade, was really good. I would definitely recommend the food,” Sarah Groover said.

Another customer also provided their opinion of the service. “The wait time was short, and I was satisfied that they were so good. The sweet and spicy sauce really gave it an extra something that made the tacos even better,” said Elliott Mitchell.
